Thus, the human body has developed a complex system of enzymatic and non-enzymatic antioxidant defence mechanisms to prevent the harmful effects of free radicals. Unfortunately, this system can also be subject to excessive oxidative stress, and its effects can be mitigated by additional per os intake of antioxidants. These have become a desirable group of dietary supplements and food additives. Plant foods are a rich potential source of these antioxidants. One of the possible ways of obtaining plant antioxidants is extraction with subcritical water. Subcritical water has special properties in comparison to water under normal conditions, such as lower dielectric constant, lower density, lower surface tension and higher ionization constant. All this works in favour of better extraction efficiency and in many cases higher an tioxidative activity of extracts. In this paper, we present studies of the last five years that evaluated the antioxidative activity of extracts obtained with subcritical water</dc:description><dc:description xml:lang="sl">Radikali so del našega vsakdana, ki se mu ne moremo izogniti, a so ob povečani tvorbi škodljivi za naše zdravje. Zato je človeško telo razvilo kompleksen sistem encimskih in neencimskih antioksidativnih zaščitnih mehanizmov za preprečevanje škodljivih učinkov radikalov. Žal tudi ta sistem lahko podleže oksidativnemu stresu, učinke le-tega pa lahko omilimo z dodatnim vnosom antioksidantov. Ti so postali nepogrešljiva skupina prehranskih dopolnil in aditivov živil, rastlinska hrana pa je njihov velik potencialni vir. Eden izmed možnih načinov pridobivanja rastlinskih antioksidantov je ekstrakcija s subkritično vodo. Subkritična voda ima v primerjavi z vodo pri normalnih razmerah posebne lastnosti, kot so manjša dielektrična konstanta, manjša gostota, nižja površinska napetost in večja ionizacijska konstanta, kar deluje v korist boljšim izplenom ekstrakcij ter pogosto tudi večji antioksidativni aktivnosti izvlečkov.
