In the case study, we present the obtained results of the nutritional and health status of a physically very active adult male on a long-term plant-based (vegan) diet. The methods used in doing so were (i) blood serum analysis (selected cardiovascular risk factors, micronutrients, and safety markers (insulin-like growth factor 1 and total testosterone)), (ii) blood plasma analysis (omega-3 index), iii) urine sample analysis (creatinine and iodine), (iv) blood pressure measurement, (v) dual-energy X-ray absorptiometry and bioimpedance (anthropometric variables and body composition status), (vi) three-day weighted dietary record of food, fluids, meal replacement, and dietary supplements (energy and nutrient intake from regular food only were compared with reference values) and (vii) standardized questionnaires (socio-demographic and economic status and lifestyle assessment). The nutritional and health status of the subject was within the compared recommendations i.e., energy and nutritional adequacy, satisfactory cardiovascular health, serum micronutrients, and body composition status, except for the limit of iodine (from food only) and urinary iodine. In addition, the subject is a non-smoker and has a healthy and active lifestyle i.e., lives a family life, is socially active, with appropriate sleep patterns, low-stress status, and has appropriate control over daily prolonged sitting and alcohol intake</dc:description><dc:description xml:lang="sl">Sprejemanje rastlinske prehrane kot dolgoročnega vsakodnevnega prehranjevalnega vzorca je danes globalni trend. V študiji primera predstavljamo rezultate prehranskega in zdravstvenega statusa telesno zelo dejavnega odraslega moškega, ki se dolgoročno prehranjuje z rastlinsko (vegansko) prehrano. Uporabili smo naslednje raziskovalne metode: (i) analizo seruma krvi (izbrani srčno- žilni dejavniki tveganja, mikrohranila in varnostni označevalci, npr. inzulinu podoben rastni dejavnik 1 in celokupni testosteron), (ii) analizo krvne plazme (indeks omega-3), (iii) analizo vzorca urina (kreatinin in jod), (iv) meritev krvnega tlaka, (v) meritev z denzitometrijo in bioimpedanco (antropometrične spremenljivke in telesna sestava), (vi) tridnevni tehtani dnevnik vnosa hrane, tekočine, nadomestnega obroka in prehranskih dopolnil (energijski in hranilni vnos samo iz običajne hrane smo primerjali z referenčnimi vrednostmi) in (vii) standardizirane vprašalnike (socialno-demografski status, ekonomski status in opredelitev življenjskega sloga). Ugotovili smo, da sta bila prehranski in zdravstveni status preiskovanca v okviru referenčnih vrednosti, kar pomeni energijsko in hranilno zadostnost, zadovoljivo srčno-žilno zdravje ter ustrezno telesno sestavo in ustrezne vrednosti mikrohranil v serumu, z izjemo mejnega vnosa joda (samo iz običajne hrane) in joda v urinu.
