Apart from a healthy lifestyle and pharmacotherapy, phytosterols can help lower levels of this risk factor. Phytosterols are secondary plant metabolites, functioning as important structural components of cell membranes, just as cholesterol in animal cells. The main dietary sources of phytosterols are vegetable oils, nuts, seeds, cereals, vegetables and fruits. Following a typical diet, we usually do not consume enough phytosterols to achieve an effect, so they are frequently incorporated into functional food products and food supplements. When entering the intestinal lumen, phytosterols compete with cholesterol for the incorporation into mixed micelles. These micelles enable transport to the membranes of enterocytes, where absorption takes place. Adding phytosterols subsequently lowers LDL and total cholesterol levels, as proven in a number of studies</dc:description><dc:description xml:lang="sl">Srčno-žilni zapleti že desetletja predstavljajo najpogostejši vzrok umrljivosti odraslih na svetovni ravni, zato je pomembno vzdrževanje ustreznih vrednosti krvnih lipidov, zlasti holesterola LDL. Za zniževanje ravni tega dejavnika tveganja so nam poleg zdravega življenjskega sloga in farmakoterapije na voljo tudi fitosteroli. Gre za sekundarne metabolite rastlin, ki tako kot holesterol v živalskih celicah predstavljajo pomembno strukturno komponento celičnih membran. Največ jih zaužijemo z rastlinskimi olji, oreščki, semeni in žiti, pa tudi zelenjavo in sadjem. A vendar jih z običajno prehrano navadno ne vnesemo dovolj za dosego učinka, zato razvoj poteka v smeri funkcionalnih živil in prehranskih dopolnil. Zaužiti fitosteroli v črevesnem lumnu s holesterolom tekmujejo za vstop v mešane micele, ki omogočajo prenos do membran enterocitov, kjer poteče absorpcija.
